    • 3 tbsp Nutridian Coconut Nectar Sugar Granules
    • 3 ripe plantains (yellowish-brown and tender)
    • 1-2 tbsp Coconut oil or olive oil
    • 1 Pinch sea salt
    • ¼ tsp ground cinnamon
    • Whipped coconut cream or dairy-free ice cream (optional)


    1. Grease the skillet with the oil and heat it over medium-high heat.
    2. Chop the plantains into ½-inch slices. Toss them in a mixing bowl with the Nutridian Coconut Nectar Sugar, cinnamon and sea salt.
    3. Add just enough plantain slices to the skillet so they heat evenly. Cook for 2-3 minutes on each side until they are caramelized to a golden-brown colour.

    • 6 tbsp butter, softened
    • 1 large egg
    • 1 cup All-purpose flour
    • 1 tsp Baking soda
    • ¼ tsp Kosher salt
    • ½ tsp Vanilla


    1. Preheat oven to 375°F.
    2. Use a medium-sized bowl to beat the Nutridian Coconut Nectar Sugar, butter, egg and vanilla into a dough.
    3. Add the flour, baking soda and salt to the dough and beat to combine.
    4. Line a baking sheet with parchment paper. A generous tablespoon of the dough makes one cookie. Bake for 8-10 minutes or until the tops of the cookies appear dry.
    5. Let the cookies cool in the pan for a minute, then move them to a cooling rack.
    6. Serve warm. Keep the remainder in an airtight container so they stay soft.

    • 3 Pears
    • 3 tbsp Coconut Oil
    • ¾ cup Oats
    • ½ tsp Cinnamon


    1. Preheat oven to 350°F.
    2. Add the Nutridian Coconut Nectar Sugar, oats, oil and cinnamon to a bowl and mix well.
    3. Cut the pears in half, remove the seeds and use a spoon to scoop out a hole in each. Stuff the holes with the prepared batter.
    4. Bake for 25-30 minutes until the pears are soft and the oats are crunchy.

    • 2½ cups Sall-purpose unbleached flour

    • 1¼ cups Salmond milk
    • ½ tsp sea salt

    1. Add all the ingredients to a bowl and mix into a consistent batter.
    2. Place the batter into cupcake liners. Preheat your oven to 375°F and bake for 18-20 minutes or until a toothpick inserted into the centre comes out clean.
